Dinner

Cheesy Zucchini Egg Dish
  • 2 potatoes diced
  • olive oil
  • garlic crushed
  • onion diced
  • 2 large zucchinis grated
  • half can lentils
  • 4 eggs beaten
  • cheese grated
Boil the potatoes in a small pot to add to the mix later. Fry up the garlic and onion in olive oil in a pan then add the zucchini and stir until mixed and cooked. Mix in the lentils then the boiled potato then the eggs. Top with cheese. Reduce heat and keep covered until the egg is cooked.

Dinner

Green Veggies Mince Dish
  • olive oil
  • garlic crushed
  • onion diced
  • 500g lean mince
  • 1 sachet no-added-salt tomato paste
  • 2 zucchini grated
  • frozen spinach
  • frozen peas 
  • half a can on brown lentils
  • splash of apple cider vinegar
  • grated cheese to serve
Add ingredients to a medium-hot frying pan/dish in the order shown. Heat until cooked.
This is a good dinner for when we've had too many carbs during the day.

1st Birthday Party Foods

Banana No-Added-Sugar Birthday Cake
  • 1.5 cups of self-raising flour
  • sprinkle of cinnamon
  • 2 eggs
  • 100g butter, melted
  • 1 tub of 140g apple puree
  • splash of vanilla essense
  • 4 mashed ripe bananas 
Mix dry ingredients. Mix wet ingredients. Mix it all together. Bake in a single greased lined tin at 160 degrees celcius for 30 minutes or until a knife inserted into the centre comes out clean.

This is quite yummy. Just need to figure out how to add a no-sugar icing on top.

1st Birthday Party Foods

Double Apple No-Added-Sugar Muffins
  • 2 cups self-raising flour
  • sprinkle of cinnamon
  • 60g butter, melted
  • 1 egg
  • splash of vanilla essence 
  • 2 tubs of 140g apple puree
  • 2 or 3 apples peeled, cored and diced
  • splash of milk as required
Pre-heat oven to 200 degrees. Mix flour & cinnamon in a large bowl. Mix butter, egg, vanilla & puree in another bowl. Mix dry & wet ingredients until just combined, add splash of milk if/as required. Add diced apples. Spoon into greased and lined 12 muffin tray and bake for 20 minutes. YUM YUM!

Treat

Oat, Apple & Sultana Cookies
  • 1 cup sultanas
  • 1 apple grated
  • 1/2 cup water
  • 1 cup quick oats
  • 1 cup flour
  • 50-100g butter
  • 2 eggs
  • 1 ts vanilla essence
  • 1 ts cinnamon
  • 1 ts baking soda
Preheat oven to 150 degrees. Stew apple and sultanas in water in a small pan, then add the butter. Mix the dry ingredients in a bowl. Add the stewed apple, sultana, & butter mixture. Add eggs and vanilla and mix well. Put spoonfuls of the mixture on greased baking paper on a baking tray. Bake for 12 minutes or longer for a more dry cookie.

Even DAD loves these!

Dinner

Mince with Beans

  • 1 clove garlic, crushed & diced
  • 1 onion, diced
  • 500g lean mince (or was it 250g?)
  • 1 carrot, diced
  • 1 can of 5 bean mix with no added salt
  • 1 can of chopped tomatoes with no added salt (or the real thing if you have it)
  • 1 sachet of tomato paste with no added salt
  • 1/2 cup water
  • 2 tablespoons of lentils to thicken
In a pan with a lid, fry the garlic & onions in olive oil, then add & brown the mince, then add the other ingredients and simmer for at least half an hour with the lid on. Serve with grated cheese. This was surprisingly yummy!

Dessert

Stewed Apple
  • 1 apple peeled and grated
  • pinch of cinnamon
Cook the apple and cinnamon in a small pot with just enough water to cover the bottom of the pot. Keep the lid on to steam/stew the apple until the pieces are soft. (You can tell I'm a gourmet French trained chef who knows all the right terminology can't you?)

Serve WARM not cold.


Ben, of course, loved this. Might try adding sultanas and serve with an egg custard next time.
